One week of our new-lifestyle down. On my first post regarding KitKat's allergy, I announced we were going gluten-free. I was mistaken. We are not going gluten-free, we are going wheat-free. I've done some research and discovered that in other areas of the world, there are gluten-free products that contain wheat. However, in the US, if something says it is gluten-free, it is wheat free as well. Gluten is in wheat but it is also in other grains such as oats. KitKat is not gluten intolerant but is allergic to wheat. Therefore, we're able to eat some things that someone who is gluten intolerant cannot. Often times I will look for gluten-free products because I know that they don't contain wheat. I'll still list things as gluten-free at times but if you are gluten-free, please take note that these things are not all gluten-free.

Flywheel
Last night we watched a pretty cool movie called, "Flywheel." It was produced by the same people who did "Facing the Giants" and "Fireproof."
"Flywheel" was their first film, had an incredibly low budget and it shows. Dh commented on the fact that one scene looks like someone just video-taped a church service.
However, the story itself was really good. The kids watched it with us and were able to see an example of truly giving everything to the Lord. In fact, Mac was shedding tears when the main character apologized to his wife and shared how he was a new man. Cat commented on how it was like an updated version of Zaccheous from the Bible. The kids are all asking to watch it one more time before we mail it back to Netflix.
We were supposed to go swimming with friends today but Cat's tummy isn't feeling right so we're layin' low and hanging out at home instead. Seems like a good day to curl up together and watch a movie. I just might let them watch "Flywheel" one more time. ;o)

Gotcha Day!
Today is Mac's "Gotcha Day!" One year ago today, he stepped into our home for the first time. We had been traveling for an extensive amount of time and it was about 12:30 am so we just gave him a quick tour and went to bed.
In some ways I can hardly believe it's been a year. In other ways it seems like he's always been here. Those "remember when..." stories are starting to include him more. He's beginning to have a past with us. It's pretty cool!
On another note, we've almost completed 1 week of wheat-free, milk-free meals. Today's menu is listed below.
Monday Menu
Breakfast:
oatmeal with applesauce & cinnamon
Morning snack:
chips & salsa
Lunch:
rice cake w/ peanut butter & banana
apple slices
carrots
string cheese
Afternoon snack:
otterpop
Dinner:
rice pasta spaghetti with red sauce and sausage
rice bread with butter & garlic
green beans
pears
Evening snack:
wheat-free brownies with coconut milk ice cream (yummy!)

Sunday Supper and other things...
Mom's officially back at the driving wheel for this wheat free household. I have to say, we are all eating better. Today I noticed dh seemed to be jumping on board a little more with the program. He even ate his BLT without bread. OTOH (on the other hand), he ate his burgers with buns.
Sunday's Menu:
Breakfast:
omeletes
orange juice
coffee for dh
Morning snack:
dried fruit and walnuts
Lunch:
BLT (bacon, lettuce and tomato) We wrapped the bacon and tomato inside the lettuce and ate it. Some chose to have a little mayonnaise and/or cheese as well.
apple slices
Afternoon snack:
veggies & dip
Dinner:
grilled burgers wrapped in lettuce or on wheat free bread
corn on the cob
watermelon
potato chips
Evening snack:
juice bar
I have some tentative dinners planned for this next week. I'm hoping to blog meals like this for 2-4 weeks and then be able to look back at it to get ideas and plan menus.

New life-style take 2 (or days 2, 3 & 4)
I was blessed to attend a Women of Faith conference this weekend so I haven't been posting my menus. I did record Thursday's menu before I left but I never posted it. I made a list of ideas for my dh to feed the kids and I believe they followed it so I've listed those days menus as well. I was home for dinner Saturday evening so I know that meal's correct.
I'm also very happy to report that I stuck to the program while I was gone eating only the parts of my box lunches that were wheat free and making good choices at Duke's Chowder House where my wonderful traveling group ate dinner and the Silver Cloud where we stayed and were served breakfast.
Thursday's Menu:
Breakfast:
oatmeal with sliced bananas, granola and almond milk
orange juice
Morning Snack:
3 rainier cherries
1 T raw sesame seeds
Lunch:
cheese, pepperoni & ham slices
celery with homemade dip
apples
Afternoon Snack:
dried berries & walnuts
Dinner:
baked salmon
rice
stir fryed peppers
pears
Evening Snack:
popcorn
Friday's Menu:
Breakfast:
yogurt with granola
Morning Snack:
apples
Lunch:
peanut butter & jelly on rice cakes
carrots
string cheese
mandarin oranges
Afternoon Snack:
dried fruit
Dinner:
green salad with chicken
watermelon
Evening Snack:
frozen yogurt
Saturday's Menu:
Breakfast:
scrambled eggs
gluten free pancakes
orange juice
Morning Snack:
celery & peanut butter
Lunch:
nachos (corn chips with cheese & salsa)
apples
Afternoon Snack:
1/2 banana dipped in peanut butter & granola
Dinner:
chili
cornbread (gluten-free)
canned pears
Evening Snack:
1 gluten free shortbread cookie
I am happy to report that the kids are starting to take the focus on what they are not allowed to eat and moving it toward what they are allowed to eat. Ahhhh...progress.
Here's an interesting note: I started this post on Thursday and even though I'm not actually posting it until Sunday, it's still giving it the date of Thursday. If anyone knows how I can change that...leave me a comment. ;o)

Our new life-style...
There's so much that has happened since my last post...
So much that I could have been posting...
I just haven't found the time.
I think I may be posting on a more regular basis though. This week we figured out that dd/6 has allergies to milk and wheat. So, we're changing our whole way of eating for the entire family. We're switching to gluten-free foods and I expect we'll all feel healthier because of it.
Right now, everything is very new so I have to think about everything and read lots of labels. I decided I should write down the foods that we're eating for each meal and snacks so I can have references to go back and get ideas when I hit a mental wall. If I'm journaling anyway...what better place to journal then my blog? Right? Right! Besides, I found a lot of ideas from other peoples blogs when I came home (with the diagnosis) Tuesday night and maybe my journaling can help others who are new to this gluten-free way of living.
Plus...any of you gluten-free folks who might stumble on here can let me know if there's something I fed her that I shouldn't have. (wink)
I should mention that dd/6's milk allergy is only to liquid milk and forms of it such as ice cream. She can eat yogurt, cheese, etc. So our goal is to avoid wheat and liquid milk. Since gluten-free foods are wheat free, those are the things we're ingesting.
So, here's what we had on Wednesday:
Breakfast:
hard boiled eggs and applesauce
Morning snack:
banana dipped in peanut butter and granola
Lunch:
rice cake with peanut butter and jam
string cheese
carrot sticks
mandarin orange slices
Afternoon snack:
corn tortilla chips & salsa
Dinner:
shredded chicken w/ bbq sauce over baked potatoes with the fixings
rainier cherries and watermelon
almond milk
Evening snack:
juice bars
Whew! One successful day under our belts. *big grin* Now...the rest of our lives to go...
